Volcano Grille was built on skill, pressure, and purpose.

We’re Ken and Fitz, childhood friends who started building Volcano Grille back in 2006, when we were just 22. What began as a dream quickly became a mission: create a hibachi experience that delivers real quality, bold flavor, and unforgettable energy, without cutting corners.

Chef Ken earned his foundation in an authentic, traditional Japanese kitchen, learning discipline, technique, and standards the right way. That training later leveled up on the Las Vegas Strip at The Bellagio, cooking teppanyaki for high rollers and celebrities, where every plate has to hit and every moment has to be flawless.

Fitz brought the other half of what makes a restaurant great: the ability to build something that lasts. While studying the medical field and coming from a family rooted in business ownership, he understood structure, discipline, and what it takes to grow a concept into a real operation. Together, we built Volcano Grille with both sides of the craft: the food and the foundation.

In 2009, during the recession, we officially opened Volcano Grille in an abandoned shopping plaza. We were the only tenant. The parking lot was still dirt. Other businesses around us couldn’t even finish construction. But we showed up every day, cooked like it mattered, and bet on ourselves when it wasn’t “smart” to do it.

Five years later, we earned a better location, and the vision finally started to grow into what we always knew it could be.

Then COVID hit.

We shut down, regrouped, and rebuilt our model from the ground up. That pivot didn’t just keep us alive, it leveled us up. Demand surged, operations were pushed to the limit, and once again, we adapted, refined, and kept raising the standard.

Today, Volcano Grille is proud to be a Las Vegas staple, recognized not just by our guests, but by the city itself. We’ve won multiple Best of Las Vegas awards, including Fox 5 Viewer’s Choice, and we’ve earned major recognition online, including a spotlight from Keith Lee.
